Inositol is a substance widely present in food, with a structure similar to glucose. Pure inositol is a stable white crystal that can be dissolved in water and has a sweet taste, and is resistant to acid, alkali and heat. In animal cells, it mainly appears in the form of phospholipids, sometimes called inositol phospholipids. In cereals, it is often combined with phosphoric acid to form hexaphosphate, or phytic acid, and phytic acid can combine with calcium, iron, and zinc to form insoluble compounds, interfering with the body's absorption of these compounds.
