Introduction:
Vitamin B2, also known as riboflavin, is slightly soluble in water and is stable when heated in a neutral or acidic solution. It is a component of the protease group of the yellow enzyme in the body (the yellow enzyme plays a role of hydrogen delivery in biological redox).
